Ingredients

• 2 pounds ripe, juicy tomatoes, finely diced
• 2 tablespoons red wine vinegar
• 2 tablespoons extra-virgin olive oil
• 1 shallot, minced
• 2 tablespoons fresh basil, finely chopped
• 2 tablespoons fresh parsley, finely chopped
• 1 teaspoon Dijon mustard
• Salt and freshly ground black pepper, to taste
• Toasted croutons or crostini, for serving


Instructions

• Step 1: In a large bowl, gently combine the diced tomatoes, red wine vinegar, olive oil, shallot, basil, parsley, and Dijon mustard. Season with salt and pepper to taste, being careful not to over-season as the flavors will intensify as the tartare rests.
• Step 2: Cover the bowl and refrigerate the tomato tartare for at least 30 minutes, allowing the flavors to meld and the tomatoes to release their juices.
• Step 3: To serve, spoon the tomato tartare onto individual plates or a serving platter. Accompany with toasted croutons or crostini, allowing your guests to scoop and enjoy the refreshing and vibrant flavors.
