• 1/2 cup (120ml) heavy cream
• 1/2 cup (120ml) Parmesan cheese, grated
• 2 tbsp (30ml) unsalted butter
• 2 cloves garlic, minced
• 1 tsp (5ml) salt
• 1/2 tsp (2.5ml) freshly ground black pepper
Instructions
- Prepare the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to package instructions until al dente. Drain the pasta, reserving 1/2 cup (120ml) of the cooking water.
- Sauté the Garlic: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant and lightly golden.
- Create the Sauce: Pour in the heavy cream and the reserved pasta cooking water. Bring the mixture to a simmer and let it reduce slightly, about 2-3 minutes. Reduce the heat to low and stir in the grated Parmesan cheese until smooth and creamy.
- Incorporate the Truffles: Add the cooked pasta to the sauce and toss to coat evenly. Grate the fresh truffles over the pasta, ensuring that the truffle essence is distributed throughout. Season with salt and pepper to taste.
