Tuna Nicoise Salad

Ingredients

• 6 oz tuna steak
• 4 cups mixed greens
• 1 cup cherry tomatoes, halved
• 1/2 cup Kalamata olives, pitted and halved
• 1/2 cup steamed green beans, cooled
• 2 hard-boiled eggs, peeled and halved
• 2 tablespoons olive oil
• 1 tablespoon red wine vinegar
• 1 teaspoon Dijon mustard
• 1 clove garlic, minced
• Salt and pepper to taste


Instructions

• Step 1: Season the tuna steak with salt and pepper. Heat a grill pan or cast-iron skillet over high heat. Sear the tuna for 2-3 minutes per side, or until it reaches your desired level of doneness. Allow the tuna to rest for 5 minutes, then slice it into bite-sized pieces.
• Step 2: In a large bowl, combine the mixed greens, cherry tomatoes, Kalamata olives, and steamed green beans. Gently toss to mix.
• Step 3: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and minced garlic. Season the vinaigrette with salt and pepper to taste.
• Step 4: Add the sliced tuna and hard-boiled egg halves to the salad. Drizzle the vinaigrette over the top and toss gently to coat.
