• 4 (6-oz) salmon fillets, skin-on
• 2 tablespoons olive oil
• 1 onion, diced
• 3 cloves garlic, minced
• 1 (14.5-oz) can diced tomatoes
• 1 tablespoon tomato paste
• 1 tablespoon balsamic vinegar
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 1/2 teaspoon red pepper flakes (optional, for a spicy kick)
• Salt and freshly ground black pepper, to taste
• Chopped fresh basil, for garnish
Instructions
- Prepare the Salmon: Pat the salmon fillets dry with paper towels and season them generously with salt and pepper on both sides.
- Sear the Salmon: Heat the olive oil in a large, oven-safe skillet over medium-high heat. When the oil is shimmering, add the salmon fillets, skin-side down, and cook for 4-5 minutes, or until the skin is crispy and golden brown. Flip the fillets and cook for an additional 2-3 minutes, or until the salmon is just cooked through but still slightly translucent in the center. Transfer the seared salmon to a plate and set aside.
- Make the Tuscan Sauce: In the same skillet, reduce the heat to medium and add the diced onion. Cook, stirring occasionally, for 5-7 minutes, or until the onion is softened and translucent. Add the minced garlic and cook for an additional 1 minute, or until fragrant.
- Simmer the Sauce: Pour in the diced tomatoes and their juices, along with the tomato paste, balsamic vinegar, dried basil, dried oregano, and red pepper flakes (if using). Stir to combine and bring the mixture to a simmer. Reduce the heat to low and let the sauce simmer for 10-15 minutes, stirring occasionally, until the flavors have melded and the sauce has thickened slightly.
- Finish the Dish: Nestle the seared salmon fillets back into the skillet, spooning the Tuscan sauce over the top. Transfer the skillet to the oven and bake at 400°F (200°C) for 8-10 minutes, or until the salmon is cooked through and flakes easily with a fork.
