Ingredients
• 1 (4-5 lb) whole chicken
• 2 tablespoons olive oil
• 1 tablespoon kosher salt
• 1 teaspoon black pepper
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• 1 lemon, halved
• 4 cloves garlic, peeled and smashed
Instructions
• Step 1: Preheat your oven to 425°F (220°C). Pat the chicken dry with paper towels and place it in a large roasting pan or on a rimmed baking sheet.
• Step 2: In a small bowl, combine the olive oil, salt, pepper, thyme, and rosemary. Rub the seasoning mixture all over the chicken, including under the skin and in the cavity.
• Step 3: Place the lemon halves and garlic cloves inside the chicken’s cavity. Tie the chicken’s legs together with kitchen string and tuck the wing tips under the body.
• Step 4: Roast the chicken for 60-75 minutes, or until the internal temperature reaches 165°F (75°C) in the thickest part of the thigh. Baste the chicken with the pan juices every 15 minutes during the cooking process.
• Step 5: Once the chicken is cooked through, remove it from the oven and let it rest for 10-15 minutes before carving and serving.
