Zesty Italian Pasta Salad

Ingredients

• 1 pound (16 ounces) rotini pasta
• 1 cup cherry tomatoes, halved
• 1 cup chopped cucumber
• 1/2 cup sliced black olives
• 1/2 cup diced red onion
• 1/2 cup shredded mozzarella cheese
• 1/4 cup grated Parmesan cheese
• 1/4 cup chopped fresh basil
• 1/4 cup chopped fresh parsley
• 2 tablespoons capers (optional)


Instructions

• Step 1: Cook the rotini pasta according to package instructions until al dente. Drain and rinse with cold water to cool completely.
• Step 2: In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, cucumber, black olives, red onion, mozzarella cheese, Parmesan cheese, basil, and parsley. Toss gently to mix.
• Step 3: In a small bowl, whisk together the dressing ingredients: 1/4 cup olive oil, 2 tablespoons red wine vinegar, 1 tablespoon lemon juice, 1 teaspoon Italian seasoning, 1/2 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
• Step 4: Pour the dressing over the pasta salad and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 24 hours) to allow the flavors to meld.
• Step 5: Just before serving, taste and adjust seasoning as needed. Garnish with additional fresh basil or parsley, if desired.
