Instructions
- Prepare the Zucchini: Grate the zucchini using a box grater or the grating attachment of a food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and wring out as much excess moisture as possible. This step is crucial for achieving the perfect texture.
- Make the Batter: In a large bowl, whisk together the lightly beaten egg, all-purpose flour, panko breadcrumbs, parmesan cheese, dill, chives, garlic powder, salt, and black pepper until well combined. Gently fold in the squeezed zucchini and lemon zest until just incorporated, being careful not to overmix.
- Fry the Fritters: Heat 1/4 inch of vegetable oil in a large skillet over medium-high heat. Scoop heaping tablespoons of the zucchini batter and gently place them in the hot oil, making sure not to overcrowd the pan.
