• 1 cup (240 ml) heavy cream
• 8 ounces (225 g) high-quality dark chocolate, chopped
• 2 tablespoons (30 ml) maple syrup
• 1/4 teaspoon (1.25 ml) sea salt
Instructions
- Prepare the Cream: In a medium saucepan, heat the heavy cream over medium heat, stirring occasionally, until it just begins to simmer. Remove the pan from the heat as soon as you see small bubbles forming around the edge.
- Melt the Chocolate: In a heatproof bowl, place the chopped dark chocolate. Pour the hot cream over the chocolate and let it sit for 2-3 minutes to allow the chocolate to melt. Then, gently whisk the mixture until it’s smooth and silky.
- Add the Sweetener: Stir in the maple syrup and sea salt until they are fully incorporated. The maple syrup will add a subtle sweetness and the salt will help balance the flavors.
- Chill and Thicken: Transfer the ganache to a clean bowl and cover the surface with plastic wrap to prevent a skin from forming. Refrigerate for 2-3 hours, or until the ganache has thickened to a spreadable consistency.
- Whip to Desired Texture: Once the ganache has chilled and thickened, use a hand mixer or stand mixer fitted with the whisk attachment to whip the ganache for 2-3 minutes. This will incorporate air and create an even silkier, fluffier texture.
