Ingredients

• 1 (15-ounce) can black-eyed peas, rinsed and drained
• 1 (15-ounce) can black beans, rinsed and drained
• 1 (15-ounce) can corn kernels, drained
• 1 red bell pepper, diced
• 1 yellow bell pepper, diced
• 1 red onion, diced
• 1 cup cherry tomatoes, halved
• 1/2 cup chopped fresh cilantro (or parsley)
• 1/2 cup Italian dressing


Instructions

• Step 1: In a large bowl, combine the drained and rinsed black-eyed peas, black beans, and corn kernels.
• Step 2: Add the diced red and yellow bell peppers, diced red onion, and halved cherry tomatoes to the bowl.
• Step 3: Stir in the chopped fresh cilantro (or parsley).
• Step 4: Pour the Italian dressing over the vegetable mixture and gently toss to coat everything evenly.
• Step 5: Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours, to allow the flavors to meld.
• Step 6: Serve chilled or at room temperature, and enjoy your delicious cowboy caviar with Italian dressing!
