Delightful Georgian Eggplant Rolls

Ingredients

• 2 large eggplants, sliced lengthwise into 1/4-inch thick strips
• 1 cup crumbled feta cheese
• 1/2 cup chopped walnuts
• 2 tablespoons fresh cilantro, chopped
• 2 tablespoons fresh parsley, chopped
• 2 cloves garlic, minced
• 1 teaspoon ground coriander
• 1/2 teaspoon ground cumin
• 1/4 teaspoon cayenne pepper
• Salt and black pepper to taste
• 2 tablespoons olive oil


Instructions

• Step 1: Preheat your oven to 375°F (190°C). Lightly grease a baking sheet with olive oil.
• Step 2: Lay the eggplant slices in a single layer on the prepared baking sheet. Brush the tops with olive oil and season with salt and pepper.
• Step 3: Bake the eggplant slices for 12-15 minutes, or until they are tender and pliable.
• Step 4: In a medium bowl, combine the crumbled feta, chopped walnuts, cilantro, parsley, garlic, coriander, cumin, and cayenne. Season with salt and pepper to taste.
• Step 5: Place a heaping tablespoon of the filling mixture near the base of each eggplant slice. Carefully roll up the eggplant slice around the filling, securing it with a toothpick if needed.
• Step 6: Arrange the rolled eggplant slices seam-side down on the baking sheet. Bake for an additional 15-20 minutes, or until the rolls are heated through and the filling is melted and bubbly.
