Authentic Italian Drunken Noodles

Ingredients

• 8 ounces linguine or fettuccine noodles
• 2 tablespoons olive oil
• 1 large onion, thinly sliced
• 3 cloves garlic, minced
• 1 cup cherry tomatoes, halved
• 1/2 cup dry white wine
• 2 tablespoons fresh basil, chopped
• 1 tablespoon fresh oregano, chopped
• 1/4 teaspoon red pepper flakes (optional)
• Salt and black pepper, to taste


Instructions

• Step 1: Bring a large pot of salted water to a boil. Cook the linguine or fettuccine according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
• Step 2: In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté for 5-7 minutes, until softened and lightly caramelized.
• Step 3: Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
• Step 4: Pour in the white wine and let it simmer for 2-3 minutes, scraping up any browned bits from the bottom of the pan.
• Step 5: Add the halved cherry tomatoes, chopped basil, chopped oregano, and red pepper flakes (if using). Season with salt and black pepper to taste.
• Step 6: Add the cooked linguine or fettuccine to the skillet and toss everything together until the noodles are fully coated in the sauce. Serve immediately, garnished with extra fresh basil if desired.
