Ingredients
• 6 large eggs
• 1/2 cup soy sauce
• 1/4 cup mirin
• 2 tablespoons toasted sesame oil
• 1 pound ground pork
• 1 tablespoon vegetable oil
• 4 cups chicken or vegetable broth
• 8 ounces ramen noodles
• 2 cups shredded cabbage
• 2 green onions, thinly sliced
• 1 tablespoon sesame seeds
Instructions
- Marinate the Eggs: Place the eggs in a medium saucepan and cover with cold water by 1 inch. Bring to a boil over high heat, then immediately remove from heat and let stand for 6 minutes. Drain the hot water and cover the eggs with cold water to stop the cooking. Carefully peel the eggs and place them in a shallow bowl or baking dish. In a small bowl, whisk together the soy sauce, mirin, and sesame oil. Pour the marinade over the eggs, cover, and refrigerate for at least 30 minutes (or up to 2 days).
- Cook the Pork: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the ground pork and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Transfer the cooked pork to a plate and set aside.
- Prepare the Ramen: In a large saucepan, bring the broth to a simmer over medium heat. Add the ramen noodles and cook according to package instructions, usually 2-3 minutes. Remove from heat and stir in the cooked pork.
- Assemble the Dish: Divide the ramen noodles and broth between 4 serving bowls. Top each bowl with 1/2 cup of shredded cabbage, a couple of the marinated eggs (sliced in half), a sprinkle of sliced green onions, and a sprinkling of sesame seeds.
