Ingredients

• 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
• 1 (20 oz) can pineapple chunks, juices reserved
• 1 cup uncooked long-grain white rice
• 1 cup low-sodium chicken broth
• 1/4 cup low-sodium soy sauce
• 2 cloves garlic, minced
• 1 teaspoon ground ginger
• 1/4 teaspoon red pepper flakes (optional, for a touch of heat)
• Salt and pepper to taste


Instructions

  1. Prepare the Ingredients: Cut the chicken breasts into 1-inch cubes. Drain the pineapple chunks, reserving the juices. Mince the garlic.
  2. Layer the Crock Pot: Place the cubed chicken in the bottom of your slow cooker. Pour the reserved pineapple juices over the chicken, then add the pineapple chunks, uncooked rice, chicken broth, soy sauce, garlic, and ground ginger. Season with salt and pepper to taste.
  3. Cook to Perfection: Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and the rice is tender. Stir the mixture halfway through the cooking time to ensure even distribution of flavors.
