Zucchini Lasagna Roll Ups

Ingredients

• 6-8 medium-sized zucchini, sliced lengthwise into 1/4-inch thick strips
• 1 1/2 cups ricotta cheese
• 1 cup shredded mozzarella cheese
• 1/2 cup grated Parmesan cheese
• 1 egg
• 2 cups marinara sauce
• 2 tablespoons fresh basil, chopped
• 1 teaspoon garlic powder
• Salt and pepper to taste


Instructions

• Step 1: Preheat your oven to 375°F (190°C). Slice the zucchini lengthwise into 1/4-inch thick strips. Lay the zucchini slices in a single layer on a paper towel-lined baking sheet and let them sit for 15-20 minutes to absorb any excess moisture.
• Step 2: In a medium bowl, mix together the ricotta, 1/2 cup of the mozzarella, Parmesan, egg, basil, garlic powder, salt, and pepper until well combined.
• Step 3: Spread 1/2 cup of the marinara sauce in the bottom of a 9×13-inch baking dish. Lay a zucchini slice flat on a clean surface and place 2-3 tablespoons of the ricotta mixture at the end of the slice. Carefully roll up the zucchini and place it seam-side down in the prepared baking dish. Repeat with the remaining zucchini slices and ricotta mixture.
• Step 4: Pour the remaining 1 1/2 cups of marinara sauce over the top of the rolled-up zucchini. Sprinkle the remaining 1/2 cup of mozzarella cheese over the top.
• Step 5: Bake for 30-35 minutes, or until the zucchini is tender and the cheese is melted and bubbly. Let the Zucchini Lasagna Roll Ups cool for 5 minutes before serving.
